Asparagus - 1, Niki - 0

What could be worse than a disastrous attempt at cooking a new food?
Waiting and waiting and waiting, trying to make a decision about when and how to make the attempt until the food in question goes bad waiting for you.
I don't know why i am so intimidated by the asparagus, but i am.
And now it has gone kerwobbely in the fridge.
sigh...
BUT to deflect attention from my asparagus debacle i present a lovely mushroom quesadilla.
I don't really like mushrooms (what is with that freaky texture?!?) but i had a bunch of sliced ones left over that i didn't want to go to waste (unlike the asparagus, dagnabit) so i marinated them overnight in red wine vinegar, seasoned rice vinegar, olive oil, minced garlic and red pepper flakes.
I sauteed them up with some red onions and mixed that with pepper jack cheese and some 3-cheese mexican shed.
It was pretty spicy so i paired it raw sugar snap peas and grapes.
Wow, mushrooms don't have to suck.
