Brownies!
Happy National Brownie Day!
Dontcha just love brownies? They're like the middle ground between cake and cookies. Over the weekend i made 6 batches of brownie in celebration. I don't bake from scratch cause if you screw up the chemistry the recipes fail miserably and i just can't be bothered to measure and sift and measure again. Really, people? I love brownie mix - all of the work is done for you, so you can concentrate on fun inclusions. This year i made :
- triple chocolate (syrup in the batter, chips in the batter and fudge drizzled over)
- hazelnut (so much more festive and yummy than walnuts - yuck)
- coconut (shred in the batter and then toasted on the top)
- peanut butter chip (it was the house favorite last year so i made 2 batches this year) and
- white chocolate holiday swirl (cool red and green white chocolate chips).
Some of my past brownie exploits include:
- holiday mint (substitute peppermint schnapps for the water and crushed candy cane pieces)
- pecan (fresh from the south - yum)
- chocolate chip (self-explanatory, non?)
- M & Ms (i like them on the top instead of inside)
- Black Forest (cherry pie filling juice for the water, cherries on the top and bittersweet fudge drizzled over)
- frosted (i had both vanilla and chocolate so people could choose)
- butterscotch chip (i normally throw in some chocolate chips whenever i put in a flavor chip) and
- Rocky Road (mini marshmallows, chopped nuts and chocolate chips).

I'm glad I'm reading this after lunch and not before! Otherwise I'd be drooling!
I make one called "Killer Brownies."
Brownie with melted caramels and chocolate chips inside. A HIT with the co-workers.
ohhhhhh... i'd never thought of caramels inside... i freakin' LOVE caramel
