Brownies!

Happy National Brownie Day! Dontcha just love brownies? They're like the middle ground between cake and cookies. Over the weekend i made 6 batches of brownie in celebration. I don't bake from scratch cause if you screw up the chemistry the recipes fail miserably and i just can't be bothered to measure and sift and measure again. Really, people? I love brownie mix - all of the work is done for you, so you can concentrate on fun inclusions. This year i made : - triple chocolate (syrup in the batter, chips in the batter and fudge drizzled over) - hazelnut (so much more festive and yummy than walnuts - yuck) - coconut (shred in the batter and then toasted on the top) - peanut butter chip (it was the house favorite last year so i made 2 batches this year) and - white chocolate holiday swirl (cool red and green white chocolate chips). Some of my past brownie exploits include: - holiday mint (substitute peppermint schnapps for the water and crushed candy cane pieces) - pecan (fresh from the south - yum) - chocolate chip (self-explanatory, non?) - M & Ms (i like them on the top instead of inside) - Black Forest (cherry pie filling juice for the water, cherries on the top and bittersweet fudge drizzled over) - frosted (i had both vanilla and chocolate so people could choose) - butterscotch chip (i normally throw in some chocolate chips whenever i put in a flavor chip) and - Rocky Road (mini marshmallows, chopped nuts and chocolate chips). What are your favorite kind of brownies? Whether you make 'em or buy 'em, enjoy some brownies today!

I'm glad I'm reading this after lunch and not before! Otherwise I'd be drooling!

I make one called "Killer Brownies."

Brownie with melted caramels and chocolate chips inside. A HIT with the co-workers.
